Healthy Waldorf Salad
This is the perfect recipe for a quick and easy lunch.
It's the Miss Fit Skinny Tea's version of the classic Waldorf Salad but without mayo and all the badness.
I find this is a great way of eating celery if you're not a big fan. Celery is packed with water and is so beneficial, but let's be honest, it doesn't taste amazing. With this recipe, you can barely taste the celery, but it adds a nice crunch to the salad and provides you with loads of benefits.
This recipe serves two people
1/2 tub of Greek yogurt
juice of 1 lemon
2 tbsp honey
2 apples chopped
handful of grapes halved (optional)
1 celery stalked chopped
handful walnuts (optional)
Combine the yogurt, honey and lemon together in a bowl
Add the apples and celery and coat them in the yogurt mix
Add the remainder of the ingredients and mix together
And that's it, so simple and so good.
You can prep this recipe a day ahead and store in a jar in the fridge.
