I just know you guys are going to LOVE this recipe. It's a handy one because it can be a dinner or a lunch. For lunch, cut out the rice and halve the portion.
Prep and cooking takes around 20 mins so it's a great meal if you're not in the mood for cooking and have a hankering for a Chinese.
I don't like to cook on a Friday night, but I actually looked forward to making this and it definitely got the idea of a Friday night take-away out of my mind.
In the image above you'll see that my rice is spicy Mexican, don't use that (TRUST ME), just go for regular wholegrain.
So put down the take-away menu and make a list instead.
Take all the greens and steam in a microwave for 6-7 mins (900w)
On a low to medium heat, stir fry the shallot with coconut oil for 2 mins
Add the garlic, mushrooms and chilli and stir fry until tender
Add the greens and stir fry until soft
Drizzle sriracha sauce and garlic paste into the wok and stir through veg.
Add prawns and paprika and remaining sriracha sauce.
Add crumbled feta cheese to the stir and mix in
Transfer to bowl/plate and serve
